Pork Tortilla Stack

This is a great recipe to make with your kids on a weekend! It doesn't take long to make, and you can change the filling to suit your tastes and dietary needs. There are ideas for changes at the bottom of the recipe blog.

Equipment

  • medium saute pan
  • round oven proof dish

Ingredients
  

  • 500 grams pork mince use any type of mince as a swap
  • 1 jar enchilada or taco sauce choose your heat level to suit
  • 1 cup grated cheddar
  • 4 wholegrain wraps use GF if required

Instructions
 

  • Brown the pork mince with a little olive oil, in a non-stick pan. Add the sauce and simmer for 10 minutes.
  • On an oven proof dish, layer the tortilla, mince, cheese, finishing with a tortilla, and finally a thin layer of cheese.
  • Pop under hot grill for 5 minutes until cheese is bubbling.
    To serve, cut into sections and eat straight from the pan.
