Chia and Blueberry Slice

This Chia and Berry slice is an Irresistible energy hit!

Chia and Blueberry slice Chia and berries together make a wonderful centre for this super healthy slice.

Note from the author: This Chia slice can very easily be made as a Gluten Free treat. Use GF muesli, or make up your own mixture to the 3 cup amount in the recipe. The blueberries can be swapped for any berries, or even cooked apricots.

Chia and Blueberry Slice

serves 8 Very easy 10 min prep, 25 minutes cooking

Ingredients:

3 cups of your favourite muesli or granola – choose one with low sugar content
or
3 cups(in total) of rolled oats, coconut, chopped macadamias, some pepitas and pistachios.
1/2 cup shredded coconut
1/2 cup plain flour, or 1/2 cup almond meal
100g butter – melted with the honey
3 tablespoons honey
1 egg
250g blueberries or raspberries
juice of half a lemon
1/3 cup chia seeds

Steps to success:

  1. Preheat oven to 160°C
  2. In a small microwave jug, put the berries and the lemon juice. Heat until boiling for about 40 seconds. (If using frozen fruit, cook for 2 minutes). Add the Chia and let stand for 10 minutes – this will soak up the juices and not be so runny.
  3. In a separate large bowl, put the dry ingredients. Add the butter/honey mix and stir well. Add the egg and it should just come together.
  4. Line a slice tin with baking paper and put two thirds of the base mixture into it. Press down with a spoon or your hand so that it forms a solid base for the blueberry mixture.
    Spread the blueberry/raspberry mixture evenly over the base. Take the rest of the base mixture and crumble evenly over the top.
  5. Pop into the oven for about 20 minutes, until the top has a lovely golden crunch to it.
